500g of diced lamb
1 tsp of coconut oil
1 bag of microwave basmati rice
1 can of chopped tomatoes
1 green pepper
1 tbsp of curry powder
1 tsp of cumin
1 tsp of oregano
1 tbsp of masala paste
Handful of spinach
- Pre-heat large pan and add coconut oil until melted
- Add lamb and seal by cooking on a high heat for 60 seconds on both sides before reducing heat and adding the can of chopped tomatoes, curry powder, cumin, oregano and masala paste.
- Meanwhile, chop up the onion and green pepper and add to the pan.
- Stir and leave to simmer for 10-12 minutes before microwaving a bag of basmati rice and serving up!
