500g of diced lamb

1 tsp of coconut oil

1 bag of microwave basmati rice

1 can of chopped tomatoes

1 green pepper

1 onion

1 tbsp of curry powder

1 tsp of cumin

1 tsp of oregano

1 tbsp of masala paste

Handful of spinach



  1. Pre-heat large pan and add coconut oil until melted
  2. Add lamb and seal by cooking on a high heat for 60 seconds on both sides before reducing heat and adding the can of chopped tomatoes, curry powder, cumin, oregano and masala paste.
  3. Meanwhile, chop up the onion and green pepper and add to the pan.
  4. Stir and leave to simmer for 10-12 minutes before microwaving a bag of basmati rice and serving up!
