Garlic & Coriander Naan Tear Up With Chicken Masala

Time: 15 Mins  Portions:2

1 tsp of coconut oil

1 large garlic & coriander naan (I recommend previns)

300g of chicken breast

2 tbsp of masala cooking paste

2 tbsp of tomato paste

3 cloves of crushed garlic

1 red pepper

A handful of spinach

1 large onion

1 tsp of cumin

1 tsp of curry powder

1 tsp of dried basil

1 tsp of black pepper

200ml of water

  1. pre-heat pan before adding coconut oil and chopping up the chicken breasts – then add to pan and cook on a high heat for 2-4 minutes to seal the chicken.
  2. Meanwhile, chop up red pepper, onion and crush garlic before adding to the pan along with masala cooking paste, tomato cooking paste, spinach,  cumin, curry powder, dried basil and black pepper.
  3. Add 200ml of water before stirring ingredients around, reducing heat and simmering for a further 10 minutes until chicken is cooked through.
  4. Finally, get your naan bread on a large baking tray before adding the above ingredients on top and cooking in the oven for 2-4 minutes until the edges of the naan are nice and crispy!
